Other Ingredients:

Ingredient Quantity
Onion (finely chopped) 1
Coriander leaves (Dhania), finely chopped 1/2 cup
Chives (finely chopped) 1/4 cup
Instant Oats (powdered) 1 cup
Salt To taste
Rice flour (optional, if needed for consistency) 1 tablespoon
Oil (for deep-frying) As required

Preparation Time:

10 minutes

Cooking Time:

40 minutes

Instructions

  1. Prepare the Ground Mixture:
Start by preparing the ingredients for grinding. In a mixer, combine the sweet corn, green chillies, ginger, and cumin seeds. Grind the mixture into a coarse paste.

  2. Combine the Ingredients:
Transfer the ground corn mixture into a large mixing bowl. Add the finely chopped onion, coriander leaves, and chives. Stir well to incorporate all the ingredients.

  3. Add Oats and Adjust Consistency:
Gradually add the powdered oats to the mixture. Mix it thoroughly, and keep adding little by little until you achieve a thick consistency that can easily hold together when shaped into fritters. The mixture should not be too runny, as this will cause the fritters to absorb excess oil during frying. If you find the mixture too loose, you can add a tablespoon of rice flour (or chickpea flour) to bind it further.

  4. Check for Salt and Spices:
Taste the mixture and adjust the salt and spices according to your preference.

  5. Form the Fritters:
Once the mixture reaches the desired consistency, shape it into small, round fritters using your hands or a spoon.

  6. Deep Fry the Fritters:
Heat oil in a deep frying pan over medium heat. Carefully slide the fritters into the hot oil and fry them in batches until they are golden brown and crispy on the outside.

  7. Drain and Serve:
Once the fritters are fried, drain them on a paper towel to remove excess oil. Serve hot with a side of your favorite chutney or dipping sauce.

Tips:

  • Consistency is Key: The key to perfectly crispy fritters is the right consistency. If the mixture is too thin, the fritters will not hold their shape and will absorb too much oil. If needed, adjust with a bit of rice flour or chickpea flour to bind the mixture.
  • Healthy Twist: If you prefer a healthier option, you can bake the fritters instead of deep-frying them. Just preheat your oven to 375°F (190°C) and bake them on a greased tray for 15–20 minutes, flipping them halfway through for an even crispiness.
  • Chutney Pairing: These fritters pair wonderfully with mint chutney, tamarind chutney, or even a yogurt-based dip for added flavor.

Enjoy your Spicy Sweet Corn & Oat Fritters as a delightful snack or appetizer that will surely impress your guests! The combination of sweet corn and oats brings together the perfect balance of flavors and textures, making it an unforgettable treat.
