Prepare the Sweet Potato Chips:
Begin by thoroughly washing the sweet potatoes to remove any dirt. Once cleaned, use a mandoline slicer to cut the potatoes into thin, even slices, ensuring each slice is approximately 1/2 mm thick. -
Bake the Chips:
Arrange the sweet potato slices in a single layer on a baking sheet lined with parchment paper. Be sure they are spread out to allow even crisping. Place the tray in a preheated oven at 180°C (350°F) for about 15-20 minutes, or until the chips are golden and crisp. Be sure to monitor the chips as baking times may vary depending on the thickness and moisture of the potatoes. -
Season the Chips:
Once baked, remove the chips from the oven and immediately sprinkle with fine salt to taste. Set aside while you prepare the Grana Padano fondue. -
Make the Grana Padano Fondue:
Pour the fresh liquid cream into a small saucepan and gently heat over medium-low heat. Stir occasionally to ensure the cream does not scorch.
