Prepare the Rice Cream:
Begin by making the rice cream. In a saucepan, combine the almond milk, basmati rice, orange zest, lemon zest, and ground cinnamon. Stir the ingredients together. -
Make the Egg Mixture:
In another pan, whisk the egg yolks, sugar, cornstarch, and a pinch of salt together. Mix thoroughly with a whisk until well combined. -
Cook the Mixture:
After the rice and almond milk mixture has been simmering for 15 minutes, add the egg mixture to it. Stir continuously with a whisk to ensure everything blends together smoothly. -
Simmer and Thicken:
Continue to cook the mixture over medium heat for another 5 minutes while stirring constantly, until it thickens and reaches a light boil. Once it has thickened, transfer the cream to a baking dish. Cover with plastic wrap and let it cool in the refrigerator for at least 1 hour. -
Prepare the Pastry:
Once the cream has chilled, roll out the puff pastry on a flat surface. Cut it into 4 strips, each approximately 8 cm wide. -
Fill the Pastry:
Place a generous amount of the chilled rice cream in the center of each pastry strip. Using a fork, gently press the cream down to leave about half a centimeter of space on either side of the strip. -
Shape the Pastry:
Fold both ends of the pastry strip toward the center to enclose the cream. Press the edges together to seal, making sure the filling is secure. Then, pinch the sides of the pastry to ensure a tight seal. -
Glaze and Bake:
Brush the top of each pastry with a little almond milk and sprinkle with sugar. Place the pastries on a baking tray and bake them in a preheated fan oven at 180°C (350°F) for 15 minutes, or until they turn golden brown. -
Cool and Serve:
Once baked, remove the pastries from the oven and allow them to cool slightly. Serve warm or at room temperature, and enjoy these crispy, sweet rice puff pastries!
