Tahu Aci (Tahu Pletok): Crispy Indonesian Tofu Snack

Ingredients:

  • 6 pieces of white tofu (or yellow tofu, if preferred)
  • 3 tablespoons all-purpose flour
  • 125 grams tapioca flour (known locally as “aci”)
  • 1/2 teaspoon salt
  • 1/2 packet chicken bouillon powder (Royco or similar)
  • 1/2 teaspoon ground pepper
  • 2 green onions (finely chopped)
  • 2 cloves garlic (minced)
  • Boiling water (as needed)

Instructions:

  1. Prepare the Tofu: Begin by cutting the tofu into bite-sized pieces, roughly dividing each piece into three parts. Adjust the size according to your preference.

  2. Mix the Batter: In a mixing bowl, combine the tapioca flour and all-purpose flour. Add the salt, chicken bouillon powder, and ground pepper to the dry ingredients. Incorporate the finely chopped green onions and minced garlic.

  3. Add Water: Gradually pour in the boiling water, a little at a time, while stirring the mixture. Continue to add water until the batter reaches a thick but smooth consistency—neither too runny nor too stiff.

  4. Coat the Tofu: Gently dip each piece of tofu into the prepared batter, ensuring it is fully coated.

  5. Fry the Tofu: Heat oil in a frying pan over medium heat. Once the oil is hot, carefully place the coated tofu pieces into the pan. Fry until golden brown and crispy on all sides. Remove from the oil and drain on paper towels.

  6. Serve: Tahu aci is best enjoyed hot and crispy. Serve with a dipping sauce of your choice, such as sliced bird’s eye chilies with sweet soy sauce, peanut sauce, sambal, or mayonnaise.
