Crispy Tahu Rambutan with Quail Eggs
Ingredients:
- 300 grams firm tofu
- 30 grams all-purpose flour
- 3 cloves garlic
- 1/2 teaspoon salt
- 1 teaspoon granulated sugar
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon chicken bouillon (Royco)
- 10 quail eggs
- Cooking oil, as needed

Prepare the Quail Eggs:
Begin by boiling the quail eggs until they are fully cooked. Once they are done, set them aside to cool. -
Make the Spice Mixture:
Peel and finely chop the garlic. In a small bowl, combine the garlic with salt, ground black pepper, granulated sugar, and chicken bouillon. Mix well until the ingredients are thoroughly combined and set aside. -
Prepare the Tofu:
Cut the tofu into small pieces and mash it until smooth. For a finer texture, you can use a food processor. -
Combine Ingredients:
Add the prepared spice mixture to the mashed tofu and stir until well integrated. Gradually mix in the all-purpose flour, ensuring the tofu mixture is uniform and slightly sticky. -
Shape the Tofu Balls:
Wash your hands thoroughly. Take approximately 2 tablespoons of the tofu mixture and flatten it slightly in your palm. Place a quail egg in the center, then fold the tofu around the egg to enclose it completely, forming a small ball. Roll each ball in the palm of your hands to smooth it out. -
Coat the Tofu Balls:
Crush the cooked quail eggs’ shells (or use dry noodles if preferred) and spread them on a plate. Gently roll each tofu ball in the crushed noodles, ensuring an even coating. -
Fry the Tofu Balls:
Heat enough cooking oil in a frying pan over low heat. Once the oil is hot, carefully add a few tofu balls at a time. Fry them gently, turning occasionally, until they are golden brown and cooked through. Be patient and keep the heat low to ensure they cook evenly without burning. -
Drain and Serve:
Once the tofu balls are cooked, remove them from the oil and drain on paper towels. Arrange them on a serving plate. -
