Tahu Telur with Peanut Sauce, Malang Style

Ingredients

  • 2 medium-sized tofu blocks, diced into small cubes
  • 3 eggs
  • Bird’s eye chili peppers, to taste (optional)
  • 4 tablespoons cooking oil
  • 2 tablespoons sweet soy sauce (kecap manis)
  • 3 cloves garlic
  • Salt, to taste
  • Sugar, to taste
  • Water, as needed
  • 4 tablespoons fried peanuts

Instructions

  1. Prepare the Tofu and Eggs:

    • Dice the tofu into small cubes.
    • In a bowl, beat the eggs until well mixed.
    • Add the tofu cubes into the beaten eggs, then season with salt, a pinch of flavor enhancer, and pepper. Stir until the tofu is well coated with the egg mixture.
  2. Fry the Tofu and Eggs:

    • Heat the cooking oil in a pan over medium heat.
    • Pour the tofu and egg mixture into the pan and fry until golden brown and slightly crispy. Set aside once done.
  3. Make the Peanut Sauce:

    • In a mortar or food processor, grind the garlic, fried peanuts, sugar, salt, and bird’s eye chili peppers (if using) until smooth.
    • Gradually add water and sweet soy sauce to the peanut mixture, stirring continuously until the sauce reaches a thick and smooth consistency.
  4. Assemble the Dish:

    • Arrange the fried tofu and egg mixture on a serving plate.
    • Generously pour the peanut sauce over the top.
