Tahu Telur with Peanut Sauce, Malang Style
Ingredients
- 2 medium-sized tofu blocks, diced into small cubes
- 3 eggs
- Bird’s eye chili peppers, to taste (optional)
- 4 tablespoons cooking oil
- 2 tablespoons sweet soy sauce (kecap manis)
- 3 cloves garlic
- Salt, to taste
- Sugar, to taste
- Water, as needed
- 4 tablespoons fried peanuts

Prepare the Tofu and Eggs:
- Dice the tofu into small cubes.
- In a bowl, beat the eggs until well mixed.
- Add the tofu cubes into the beaten eggs, then season with salt, a pinch of flavor enhancer, and pepper. Stir until the tofu is well coated with the egg mixture.

Fry the Tofu and Eggs:
- Heat the cooking oil in a pan over medium heat.
- Pour the tofu and egg mixture into the pan and fry until golden brown and slightly crispy. Set aside once done.

Make the Peanut Sauce:
- In a mortar or food processor, grind the garlic, fried peanuts, sugar, salt, and bird’s eye chili peppers (if using) until smooth.
- Gradually add water and sweet soy sauce to the peanut mixture, stirring continuously until the sauce reaches a thick and smooth consistency.

Assemble the Dish:
- Arrange the fried tofu and egg mixture on a serving plate.
- Generously pour the peanut sauce over the top.
