Instructions:

  1. Fry the Tempe and Anchovies:

    • Heat oil in a pan and fry the tempe slices until they turn golden brown and crispy. Set aside to drain.
    • In the same pan, fry the anchovies until they become crispy and golden. Remove and set aside with the tempe.
  2. Prepare the Spice Paste:

    • In a blender or food processor, grind the shallots, garlic, and red chilies until smooth.
    • Heat a little oil in a pan, then sauté the spice paste along with the sliced galangal and bay leaf until fragrant and well-cooked.

    • Add the sliced palm sugar, tamarind water, and salt to the pan. Stir until everything is well combined and the sugar has dissolved, creating a thick, flavorful sauce.
  4. Combine the Tempe and Anchovies:

    • Add the fried tempe and anchovies to the pan, tossing them gently with the sauce. Stir-fry for a couple of minutes to allow the flavors to meld together.
    • Taste and adjust the seasoning if necessary.
  5. Serve:

    • Once everything is well mixed and the tempe and anchovies are evenly coated in the sauce, remove from heat.
    • Serve warm as a side dish, snack, or accompaniment to steamed rice.
