Crispy Tempe Chicken Bites with Garlic-Coriander Spice

Kornet Tempe Balut Ayam

Ingredients:

  • 2 packages tempe, crushed
  • 200 grams chicken breast, blended
  • 100 grams bread crumbs
  • Salt, to taste
  • Chopped celery leaves (daun sop)
  • Chopped green onions (daun bawang)
  • For the spice paste:
    • 5 cloves garlic
    • 1 tablespoon coriander seeds
    • 1/2 packet ground black pepper
  • Cooking oil, for frying

Instructions:

  1. Prepare the Chicken Mixture: In a blender, combine the chicken breast with 1/2 cup of water. Blend until smooth. Add the bread crumbs and salt to the blender, mixing well. Then, incorporate the spice paste (made from blending garlic, coriander seeds, and ground black pepper) into the mixture.

  2. Combine with Tempe: Transfer the blended chicken mixture into the bowl with the crushed tempe. Mix thoroughly until well combined. Fold in the chopped celery leaves and green onions.

  3. Fry the Mixture: Heat a generous amount of cooking oil in a pan over medium heat. Spoon portions of the tempe and chicken mixture into the pan, shaping them as you go. Fry until each piece is golden brown and crispy.

  4. Serve: Remove from the pan and drain on paper towels. Serve hot with your choice of dipping sauce or sambal.
