Perkedel Tempe: Crispy Tempe Fritters with a Flavorful Twist

Ingredients:

Tempe (steamed and mashed) 4 small blocks (papan kecil tempe)
Carrot (grated) 2 medium-sized carrots (parut)
Green onion (finely chopped) 1 stalk (daun bawang)
Garlic (finely minced) 3 cloves (bawang putih)
Egg (beaten) 1 large egg (butir telur)
Ground black pepper To taste (merica bubuk)
Salt To taste (garam)
Flour (for coating) “Sajiku” flour mixed with water
Bread crumbs (for coating) As needed (tepung panir)

Instructions:

  1. Prepare the tempe mixture: In a large mixing bowl, combine the steamed tempe (mashed), grated carrots, finely chopped green onion, and minced garlic. Mix them well to ensure all the ingredients are evenly incorporated.

  2. Season the mixture: Add the beaten egg, ground black pepper, and salt to the bowl. Stir everything thoroughly until the mixture forms a smooth and cohesive batter.

  3. Form the fritters: Shape the tempe mixture into small round or oval patties, as per your preference.

  4. Coat the patties: Prepare two bowls – one with “Sajiku” flour mixed with a little water for a thin coating, and the other with bread crumbs. Dip each patty into the flour mixture, ensuring an even coating, then roll the patties in the bread crumbs until fully coated.

  5. Chill the patties: Place the breaded patties on a tray or plate, and refrigerate them for about 1 hour. This helps the fritters firm up and enhances their crispiness when frying.

  6. Fry the fritters: Heat a generous amount of oil in a frying pan over medium heat. Once the oil is hot, fry the tempe fritters in batches, turning them occasionally, until they are golden brown and crispy on all sides. This should take about 3-4 minutes per side, depending on the thickness of the patties.

  7. Drain and serve: Once the fritters are cooked, remove them from the oil and drain on paper towels to remove excess oil.
