Tempe Melet – Crispy Tempe Fritters

Tempe Melet, a beloved Indonesian dish, is a unique twist on traditional tempeh fritters. This recipe is flavorful, packed with fresh vegetables, and coated in a crispy batter, making it the perfect snack or appetizer. In this version, the tempe is filled with a savory mixture of vegetables and spices, then fried to golden perfection.

Ingredients

Ingredient Quantity
Tempeh 200g (sliced into pieces)
Bean sprouts (Tauge) 100g
Corn (Jagung) 50g (optional)
Eggs (Telur) 2
Crispy flour (Tepung Crispy) 150g
Scallions (Daun Bawang) 2 stalks, chopped
Celery (Sledri) 1 stalk, finely chopped
Green bird’s eye chilies (Cabai Rawit Ijo) 2-3, minced (adjust for spice level)
Shallots (Bawang Merah) 3 cloves, minced
Garlic (Bawang Putih) 3 cloves, minced
Tomatoes (Tomat) 1 medium, chopped
Ground pepper (Merica) 1 tsp
Salt (Garam) To taste
Seasoning (Penyedap Rasa) 1 tsp
Cooking oil For frying

Preparation Steps

  1. Prepare the Filling:

    • Start by grinding the green bird’s eye chilies (adjust the amount based on how spicy you like it), shallots, garlic, tomatoes, ground pepper, salt, and seasoning in a mortar and pestle or food processor until smooth.
    • Dice the vegetables (bean sprouts, celery, scallions) into small pieces.
  2. Cook the Filling:

    • Heat some oil in a pan and sauté the ground spice mixture until fragrant.
    • Add the eggs to the pan, scrambling them until they are just cooked.
    • Next, add the diced vegetables and stir well. Cook until the vegetables are tender, then season with additional salt and seasoning as needed.
    • Set the filling aside to cool.
  3. Prepare the Tempeh:

    • Slice the tempeh into bite-sized pieces. Carefully cut a slit in the middle of each piece to create a pocket for the filling.
  4. Assemble the Tempe Melet:

    • Stuff each piece of tempeh with the vegetable filling you prepared earlier.
  5. Make the Crispy Batter:

    • In a separate bowl, mix the crispy flour with a little water to form a thick batter. Season it with a pinch of salt.
  6. Fry the Tempe Melet:

    • Heat oil in a frying pan over medium heat. Dip each stuffed tempeh piece into the batter and fry until golden brown and crispy on all sides.
    • Remove from the oil and drain on paper towels to remove excess oil.
  7. Serve:

    • Serve your crispy Tempe Melet hot, paired with a spicy dipping sauce or enjoy it on its own as a delicious snack or side dish.
