Tempe Penyet Sambal Terasi Recipe

Ingredients:

Tempe 3 pieces
Red chili pepper 3 pieces
Shallot 3 cloves
Salt A pinch
Shrimp paste (terasi) To taste
Basil leaves A handful
Long green beans A few, thinly sliced
Sugar A pinch
Bird’s eye chili To taste

Instructions:

Step Description
1 Cut the tempe into pieces as desired, then deep-fry until golden and crispy. Set aside.
2 In a small pan, fry 2/3 of a shallot until fragrant and golden.
3 Thinly slice the long green beans and set aside.
4 In a mortar and pestle, grind the fried shallots, red chili peppers, bird’s eye chili, salt, a small pinch of sugar, and shrimp paste (terasi) to form a smooth sambal mixture.
5 Add the sliced long green beans to the sambal mixture and stir to combine.
6 Add the fried tempe to the sambal and gently crush (penyet) the tempe with the sambal, allowing the flavors to meld together.
7 Serve the tempe penyet warm, accompanied by a side of fresh basil leaves and a steaming bowl of rice. Enjoy this flavorful dish!
