Crispy Tempe Stir-Fry Recipe

A flavorful and crispy tempe dish that’s easy to prepare with a balance of sweet, savory, and spicy flavors. Perfect as a snack or a side dish to complement your meals!

Ingredients

Tempe (soybean cake) 2 blocks
Curly chili peppers 8 pieces
Bird’s eye chili peppers 4 pieces
Kaffir lime leaves 2 leaves
Fresh galangal (laos) 2 cm piece
Salt To taste
Palm sugar To taste
Sweet soy sauce (kecap manis) To taste
Granulated sugar To taste
Powdered broth (or stock powder) To taste
Cooking oil For frying

Instructions

  1. Prepare the Tempe:

    • Cut the tempe into bite-sized pieces, based on your preference.
    • Heat oil in a pan and fry the tempe until golden and crispy. Once cooked, remove from oil and drain on paper towels to remove excess oil.
  2. Prepare the Spice Paste:

    • Slice the curly and bird’s eye chili peppers.
    • Peel and slice the shallots and garlic.
    • Crush the galangal and set aside.
    • Tear the kaffir lime leaves into pieces.
  3. Sauté the Spice Paste:

    • Heat some oil in a pan, and sauté the sliced chili peppers, shallots, garlic, galangal, and kaffir lime leaves until fragrant and the shallots are translucent.
    • Add salt, powdered broth, palm sugar, and granulated sugar to taste. Stir well to combine.
  4. Combine the Tempe:

    • Add the fried tempe pieces to the pan with the sautéed spices. Stir everything together, making sure the tempe is well-coated with the mixture.
    • Add a splash of sweet soy sauce (kecap manis) to balance the flavors, and stir-fry briefly to allow the tempe to absorb the seasoning.
    • Adjust the seasoning if necessary, adding more sugar or salt to taste.
  5. Serve:

    • Once the tempe is well-coated and the flavors have melded together, remove from heat.
    • Transfer to a serving bowl and enjoy while still warm!

Tips for Success:

  • If you prefer more heat, you can add extra bird’s eye chilies.
  • For a more authentic flavor, use fresh tempe from a local market.
  • This dish pairs well with steamed rice and other Indonesian dishes.
