Simple Crispy Tempeh with Anchovies

This easy-to-make Indonesian dish, called Kering Tempe Teri, features crispy tempeh combined with fried anchovies, enveloped in a flavorful spicy sauce. It’s perfect to enjoy with warm rice, and a great side dish for any meal!

Ingredients

Tempeh 1 block
Anchovies (dried small fish) 1 small bowl

Spice Paste (Bumbu Halus):

Shallots 4 bulbs
Garlic cloves 3 cloves
Bird’s eye chilies 11 pieces
Kaffir lime leaves 2 leaves, torn
Galangal (Laos) 1/2 small segment
Salt To taste
Flavor enhancer (optional) To taste

Additional Ingredients:

Bird’s eye chilies (sliced) 7 pieces
Palm sugar (thinly sliced) As needed
Sweet soy sauce (kecap manis) As needed
Water As needed

Instructions

  1. Prepare and Fry the Tempeh and Anchovies
    Slice the tempeh into thin pieces and fry them in hot oil until they turn crispy and golden. Once done, remove from the oil and set aside. Next, fry the anchovies until they are crispy, then remove them from the pan and set aside.

  2. Cook the Spice Paste
    In the same pan, add a little more oil and sauté the spice paste (bumbu halus) made by grinding together shallots, garlic, bird’s eye chilies, kaffir lime leaves, and galangal. Cook until the spices release a fragrant aroma and change color.

  3. Add the Additional Ingredients
    Once the spices are well-cooked, add the sliced bird’s eye chilies, palm sugar, and sweet soy sauce. Stir well until the palm sugar melts and the ingredients are mixed evenly. Add a little water to create a sauce, adjusting the quantity based on your preference for the thickness of the sauce.

  4. Combine Tempeh and Anchovies
    Add the crispy tempeh and anchovies into the pan with the sauce. Stir everything together until the tempeh and anchovies are evenly coated with the sauce. Taste and adjust seasoning with salt or a flavor enhancer if necessary.

  5. Serve
    Remove from heat and serve the dish with warm rice. Enjoy this crispy, flavorful dish as a side for your meal!
