Crispy Tempe and Egg Stir-Fry Recipe

Ingredients:

  • 3 eggs
  • 1 block of tempeh
  • Seasoned flour (I used Kobe Spicy Flour)
  • 6 shallots
  • 3 garlic cloves
  • 2 red chilies
  • 10 bird’s eye chilies
  • Salt, to taste
  • Sugar, to taste
  • Seasoning powder (I used Masako Beef Flavor)

Instructions:

  1. Prepare the Eggs:

    • Beat the eggs with a pinch of salt. Pour the mixture into a hot pan and cook, stirring frequently, to make scrambled eggs. Set aside.
  2. Prepare the Tempeh:

    • Cut the tempeh into small cubes. Sprinkle with seasoned flour and a little water, and mix well. Add more seasoned flour until the tempeh is evenly coated and not sticky. Fry the tempeh until golden and crispy. Set aside.
  3. Make the Sambal:

    • In a hot pan, briefly fry the shallots, garlic, red chilies, and bird’s eye chilies. This will make them easier to grind. Once slightly softened, grind them into a paste using a mortar and pestle or blender. Season with salt, sugar, and seasoning powder. Add a bit of hot cooking oil to the paste for extra flavor.
  4. Combine and Cook:

    • In a large pan over very low heat, combine the scrambled eggs, sambal, and fried tempeh. Stir gently to mix all ingredients well and allow the flavors to meld together.
  5. Serve:
