This recipe features steamed tempeh seasoned with aromatic spices, creating a savory and satisfying snack. With its crispy exterior and tender interior, Mendol Tempe is perfect for any meal or as a tasty appetizer. Let’s dive into the details of making this delicious treat!

Ingredients

Ingredient Quantity
Tempe (steamed until tender) 250 grams
Shallots (finely chopped) 2 cloves
Garlic (finely chopped) 2 cloves
Coriander 1 teaspoon
Kencur (aromatic ginger) 1 cm piece
Kaffir lime leaves (finely sliced) 2 leaves
Bird’s eye chili (optional) To taste
Salt 1 teaspoon
Sugar ½ teaspoon
Chicken stock powder 1 teaspoon
Cooking oil (for frying) As needed

Instructions

Step
1. Prepare the Tempeh: Start by steaming the tempeh until it becomes tender, then mash it in a bowl.
2. Make the Spice Paste: In a mortar and pestle or food processor, combine shallots, garlic, coriander, kencur, and kaffir lime leaves to create a smooth paste. If you like it spicy, add the bird’s eye chili at this stage.
3. Combine Ingredients: Add the spice paste to the mashed tempeh and mix until well combined. Taste the mixture and adjust the seasoning with salt, sugar, and chicken stock powder according to your preference.
4. Shape the Mixture: Form the mixture into flat, round patties or oval shapes based on your preference.
5. Fry the Patties: Heat oil in a pan over medium heat. Once the oil is hot, carefully add the patties to the pan. Fry them until golden brown and crispy on both sides.
6. Drain and Serve: Remove the patties from the oil and place them on paper towels to drain excess oil. Your Mendol Tempe is ready to be enjoyed! Serve it hot as a snack or side dish.

Tips from Bunda Didi

To prevent the tempeh from breaking apart while frying, you can add 1 tablespoon of all-purpose flour or tapioca flour to the mixture. This will help bind the ingredients together and maintain their shape during cooking.
