Crispy Tempeh Stir-Fry with Green Beans and Anchovies

Stir-Fried Anchovies, Tempeh, and Green Beans (T3B)

Ingredients:

Ingredient Quantity
Green beans As needed, cut into bite-sized pieces
Anchovies (teri) As needed, cut in half if large
Tempeh As needed, cut into cubes and fried until golden brown
Garlic 3 cloves, thinly sliced
Shallots 4 cloves, thinly sliced
Bird’s eye chilies (cabe rawit) 10 or to taste, sliced
Red chili peppers (cabe merah keriting) 2, sliced
Salt To taste
Ground pepper To taste
Flavor enhancer (optional) To taste
Cooking oil As needed for sautéing

Instructions:

  1. Prepare the Green Beans:
    Begin by cutting the green beans into small, bite-sized pieces, or as preferred. Rinse them thoroughly under running water and set aside to drain.

  2. Prepare the Anchovies:
    If you are using large anchovies, slice them into two parts. If they are small, feel free to use them whole. Set aside.

  3. Fry the Tempeh:
    Dice the tempeh into cubes and fry them in hot oil until golden brown. Once done, set them aside on a plate lined with paper towels to absorb any excess oil.

  4. Sauté the Aromatics:
    In a pan, heat a small amount of oil over medium heat. Add the sliced garlic and shallots to the pan, sautéing until fragrant and lightly golden. At this stage, you can also add a pinch of salt, ground pepper, and a flavor enhancer (if using) for seasoning.

  5. Add the Green Beans:
    Next, toss in the green beans. Stir them around until they are evenly coated with the aromatics and seasonings. Add a small splash of water to the pan to help steam the green beans slightly. Stir occasionally and cook until the beans begin to soften.

  6. Incorporate the Tempeh and Anchovies:
    Once the green beans are nearly tender, add the fried tempeh and prepared anchovies. Stir well to combine all the ingredients, allowing the flavors to meld together. Let it cook for another minute or two.

  7. Taste and Adjust:
    Taste the dish and adjust the seasoning if needed. Add more salt, pepper, or chilies to your preference. Continue cooking until the green beans are fully tender and all the ingredients are well combined.

  8. Serve:
    Once the dish is cooked to your liking, remove it from the heat and transfer it to a serving plate. Serve hot as a side dish or as part of a main meal.
