Instructions

  1. Prepare the Tempeh: Begin by frying the thinly sliced tempeh in hot oil until it is golden brown and crispy. Once fried, remove the tempeh from the pan and set it aside on a paper towel to absorb excess oil.

  2. Fry the Anchovies: In the same pan, add a little more oil if necessary, and fry the soaked and rinsed anchovies until they are crispy. Once done, remove and set aside with the tempeh.

  3. Sauté the Spice Mix: In the same pan, use the leftover oil to sauté the ground spice mixture until fragrant. Add the torn salam leaf during this process to enhance the aroma.

  4. Combine Ingredients: Once the spices are fragrant, add the fried tempeh, crispy anchovies, and peeled pete (stink beans) into the pan. Stir the mixture thoroughly to combine all ingredients.

  5. Season the Dish: Season with salt and Royco seasoning or sugar to taste, ensuring all components are evenly coated in the flavors.
