Tempe Isi Sambal (Tempe Melet) – A Flavorful Indonesian Delicacy

Introduction:

Tempe isi sambal, also known as tempe melet, is a popular Indonesian dish that showcases the rich, savory flavor of tempeh, an ingredient made from fermented soybeans. This dish combines crispy fried tempeh stuffed with a spicy sambal filling, creating a harmonious blend of textures and tastes. The sambal, infused with aromatic herbs and spices, gives this dish a mouthwatering kick that will leave your taste buds craving more. Whether you’re enjoying it as a snack or pairing it with rice for a full meal, tempe melet is sure to be a crowd-pleaser!

Ingredients:

For the Tempeh Filling:

Ingredients Quantity
Tempe (small-sized block) 1 small block
Shallots (bawang merah) 3 cloves
Garlic (bawang putih) 1 clove
Red chili (cabe merah) 1 piece
Bird’s eye chili (cabe rawit) 5 pieces
Small tomato (tomat kecil) 1 piece
Shrimp paste (terasi) to taste
Sugar (gula) to taste
Salt (garam) to taste

For the Batter (Celupan):

Ingredients Quantity
All-purpose flour (tepung terigu) 3 tbsp
Tapioca flour (tepung tapioka) 1 tbsp
Rice flour (tepung beras) 1 tbsp
Ground black pepper (merica) to taste
Salt (garam) to taste
Ground turmeric (kunyit bubuk) 1 tsp
Ground coriander (ketumbar bubuk) 1 tsp

Instructions:

  1. Prepare the Sambal Filling:
Start by blending the shallots, garlic, red chili, bird’s eye chili, and small tomato into a smooth paste. Once blended, heat a pan with a touch of oil and sauté the sambal mixture until fragrant and aromatic. Add the shrimp paste, sugar, and salt, adjusting to taste. Continue sautéing until the sambal is well-cooked and flavorful. Set this mixture aside to cool.

  2. Prepare the Tempeh:
Slice the tempeh block into thin pieces, then make a slit in the middle of each piece to create a pocket for the sambal filling. Stuff each piece of tempeh with the sambal mixture. Set aside.

  3. Make the Batter:
In a mixing bowl, combine the all-purpose flour, tapioca flour, rice flour, ground black pepper, salt, ground turmeric, and ground coriander. Add enough water to the mixture to create a smooth batter with a consistency that will easily coat the tempeh.

  4. Fry the Tempeh:
Heat oil in a pan for frying. Dip each stuffed tempeh piece into the prepared batter, ensuring it’s evenly coated. Carefully fry the tempeh in hot oil until it turns golden brown and crispy. Remove from the oil and drain on paper towels to remove excess oil.

  5. Serve and Enjoy:
Serve the crispy, golden tempe melet while still warm. Enjoy it as a delicious snack or alongside rice for a full meal. This dish pairs beautifully with a fresh cucumber salad or sambal on the side.

Tips:

  • Tempeh: If you can’t find tempeh, tofu could be used as a substitute, but it won’t provide the same texture or flavor.
  • Sambal: Adjust the level of spiciness by adding more or fewer chilies based on your preference.
  • Serving Suggestion: Tempe Melet is perfect with steamed rice and can also be enjoyed with sambal or a tangy dipping sauce.
