For the Tilapia:
- 2 whole tilapia
- Juice of 1 lime
For the Marinade:
- 4 cloves garlic
- 6 shallots
- 1-inch piece ginger
- 2 cm turmeric
For the Dabu-Dabu Salsa:
- 4 shallots
- 2 cloves garlic
- 8 bird’s eye chilies (adjust to taste)
- 2 red chilies
- Juice of 1 lime
- Salt and sugar to taste
- 4 tablespoons vegetable oil
- 1 small green tomato

Prepare the Fish: Clean the tilapia thoroughly and make several shallow cuts along the body. Rub the fish with lime juice and let it sit for about 10 minutes.

Marinate the Fish: Blend the garlic, shallots, ginger, and turmeric into a smooth paste. Apply this paste evenly over the fish and let it marinate for approximately 20 minutes.
