Grilled Tilapia with Dabu-Dabu Salsa

Ingredients:

For the Tilapia:

  • 2 whole tilapia
  • Juice of 1 lime

For the Marinade:

  • 4 cloves garlic
  • 6 shallots
  • 1-inch piece ginger
  • 2 cm turmeric

For the Dabu-Dabu Salsa:

  • 4 shallots
  • 2 cloves garlic
  • 8 bird’s eye chilies (adjust to taste)
  • 2 red chilies
  • Juice of 1 lime
  • Salt and sugar to taste
  • 4 tablespoons vegetable oil
  • 1 small green tomato

Instructions:

  1. Prepare the Fish: Clean the tilapia thoroughly and make several shallow cuts along the body. Rub the fish with lime juice and let it sit for about 10 minutes.

  2. Marinate the Fish: Blend the garlic, shallots, ginger, and turmeric into a smooth paste. Apply this paste evenly over the fish and let it marinate for approximately 20 minutes.

  3. Fry the Fish: Heat oil in a frying pan over medium heat. Fry the marinated fish until cooked through and crispy on the outside.

  4. Prepare the Salsa: Dice the shallots, garlic, chilies, and green tomato into small cubes. Place them in a bowl.

  5. Make the Salsa: Heat 4 tablespoons of vegetable oil until hot, then pour it over the diced vegetables. Add salt, sugar, and lime juice to taste. Mix well to combine.

  6. Serve: Spoon the fresh dabu-dabu salsa over the fried tilapia and serve immediately.
