Ingredients

Yellow Tofu (Tahu Kuning) 10 pieces, salted
Yellow Tofu (for mixing) 2 pieces, crushed
Tapioca Flour 250 grams
Garlic 2 cloves
Pepper To taste (or use ground pepper)
Salt To taste
Hot Water 100 ml (adjust as needed)
Chives (or green onions) Finely sliced
Seasoning (Masako or Royco) Optional for convenience

Instructions

  1. Prepare the Ingredients: Begin by crushing the pepper, salt, and garlic together. If you prefer convenience, you can skip this step and use Masako or Royco instead.

  2. Slice the Tofu: Cut the tofu into triangular pieces, reserving two pieces to be crushed and mixed into the batter.

  3. Make the Aci Mixture: In a mixing bowl, combine the tapioca flour with the crushed seasonings (pepper, garlic, salt) or Masako, along with the sliced chives. Add the crushed tofu to the mixture.

  4. Add Hot Water: Gradually pour in the hot water, mixing until the dough reaches a smooth and pliable consistency. Be careful not to add too much water; if the mixture becomes too wet, add more tapioca flour to thicken.

  5. Taste Test: Adjust the seasoning if necessary. Once the flavor is to your liking, proceed to the next step.

  6. Coat the Tofu: Generously coat each tofu piece with the Aci mixture, ensuring it’s well-covered.

  7. Fry the Tofu: Heat oil in a pan over medium heat. Fry the coated tofu pieces until golden and crispy.
