Martabak GEHU (Tofu and Bean Sprout Pastry)

Ingredients:

  • 1 large firm tofu
  • 1 egg
  • Green onions (to taste)
  • Bean sprouts (to taste)
  • Chili, garlic, and shallots, finely ground for sautéing
  • 15 sheets of ready-made spring roll wrappers
  • Cooking oil for frying

Instructions:

  1. Prepare the Tofu: Begin by breaking the tofu into small pieces and mashing it with a fork until it achieves a crumbly texture.

  2. Sauté the Aromatics: Heat a generous amount of oil in a pan over medium heat. Add the finely ground mixture of chili, garlic, and shallots to the pan. Sauté until fragrant and golden brown.

  3. Cook the Egg: Crack the egg into the pan with the sautéed aromatics and stir-fry until the egg is scrambled and fully cooked.

  4. Combine Ingredients: Add the mashed tofu to the pan, mixing well with the egg and aromatics. Continue cooking for a few minutes to allow the flavors to meld together.

  5. Add Vegetables: Incorporate the bean sprouts and chopped green onions into the mixture. Stir well and season to taste. Adjust the seasoning if necessary.

  6. Cool and Prepare for Wrapping: Transfer the tofu mixture to a bowl and let it cool slightly.

  7. Assemble the Martabak: Lay out a spring roll wrapper on a clean surface. Place a spoonful of the tofu filling in the center of the wrapper. Fold the sides of the wrapper over the filling and then roll it up tightly to form a neat parcel. If you prefer extra heat, you can add additional chili slices to the filling before folding.

  8. Fry the Pastries: Heat oil in a deep frying pan or wok until hot. Carefully place the wrapped pastries into the hot oil, frying in batches if necessary, until they are golden brown and crispy.

  9. Drain and Serve: Remove the fried martabak from the oil and drain on paper towels. Serve hot and enjoy!
