Lumpia with Tofu and Egg
Ingredients:
For the Wrapper:
- 250 grams all-purpose flour
- 3 tablespoons tapioca starch
- 3 tablespoons cornstarch
- 1 egg
- 2 teaspoons salt
- 4 tablespoons cooking oil
- Water, as needed
For the Filling:
- 3 pieces of yellow tofu (white tofu can also be used)
- 2 eggs
- 5 tablespoons all-purpose flour
- 2 tablespoons tapioca starch
- 2 teaspoons salt (or to taste)
- 1 teaspoon sugar (or to taste)
- 3 shallots
- 2 garlic cloves
- 4 chili peppers (adjust to taste)
- 2 teaspoons soy sauce
- 2 teaspoons flavor enhancer (adjust to taste)
For Frying:
- 500 grams cooking oil
Instructions:
-
Prepare the Wrapper:
- In a mixing bowl, combine the all-purpose flour, tapioca starch, cornstarch, egg, and salt. Gradually add water, mixing continuously until the batter is smooth and free of lumps. The consistency should be thin, resembling a runny pancake batter.
- Strain the batter through a fine mesh sieve to ensure it is completely smooth and free of lumps.
-
Prepare the Filling:
- For the filling, blend the shallots, garlic cloves, chili peppers, sugar, and salt together until smooth. This mixture will form the flavor base.
- Mash the tofu thoroughly. Mix in the all-purpose flour, tapioca starch, eggs, the blended spice mixture, soy sauce, and flavor enhancer. Knead until all ingredients are well combined.
-
Assemble the Lumpia:
- Heat a non-stick pan over medium heat. Pour a small amount of the wrapper batter into the pan, swirling to create a thin, even layer. Cook until the edges start to lift and the surface is set, but not fully cooked.
- Place a spoonful of the filling mixture in the center of the wrapper. Fold the sides of the wrapper over the filling, then roll tightly to form a neat package. Repeat this process with the remaining batter and filling.
-
Fry the Lumpia:
- Heat the cooking oil in a deep pan or fryer to 350°F (175°C). Carefully slide the prepared lumpia into the hot oil, frying in batches to avoid overcrowding. Fry until golden brown and crispy, about 3-4 minutes per side.
- Remove the lumpia from the oil and drain on paper towels.
-
Serve:
- Serve the lumpia hot, and enjoy them as a delightful snack or appetizer!
