Lumpia with Tofu and Egg

Ingredients:

For the Wrapper:

  • 250 grams all-purpose flour
  • 3 tablespoons tapioca starch
  • 3 tablespoons cornstarch
  • 1 egg
  • 2 teaspoons salt
  • 4 tablespoons cooking oil
  • Water, as needed

For the Filling:

  • 3 pieces of yellow tofu (white tofu can also be used)
  • 2 eggs
  • 5 tablespoons all-purpose flour
  • 2 tablespoons tapioca starch
  • 2 teaspoons salt (or to taste)
  • 1 teaspoon sugar (or to taste)
  • 3 shallots
  • 2 garlic cloves
  • 4 chili peppers (adjust to taste)
  • 2 teaspoons soy sauce
  • 2 teaspoons flavor enhancer (adjust to taste)

For Frying:

  • 500 grams cooking oil

Instructions:

  1. Prepare the Wrapper:

    • In a mixing bowl, combine the all-purpose flour, tapioca starch, cornstarch, egg, and salt. Gradually add water, mixing continuously until the batter is smooth and free of lumps. The consistency should be thin, resembling a runny pancake batter.
    • Strain the batter through a fine mesh sieve to ensure it is completely smooth and free of lumps.
  2. Prepare the Filling:

    • For the filling, blend the shallots, garlic cloves, chili peppers, sugar, and salt together until smooth. This mixture will form the flavor base.
    • Mash the tofu thoroughly. Mix in the all-purpose flour, tapioca starch, eggs, the blended spice mixture, soy sauce, and flavor enhancer. Knead until all ingredients are well combined.
  3. Assemble the Lumpia:

    • Heat a non-stick pan over medium heat. Pour a small amount of the wrapper batter into the pan, swirling to create a thin, even layer. Cook until the edges start to lift and the surface is set, but not fully cooked.
    • Place a spoonful of the filling mixture in the center of the wrapper. Fold the sides of the wrapper over the filling, then roll tightly to form a neat package. Repeat this process with the remaining batter and filling.
  4. Fry the Lumpia:

    • Heat the cooking oil in a deep pan or fryer to 350°F (175°C). Carefully slide the prepared lumpia into the hot oil, frying in batches to avoid overcrowding. Fry until golden brown and crispy, about 3-4 minutes per side.
    • Remove the lumpia from the oil and drain on paper towels.
