Crispy Tofu with Garlic and Chili

Ingredients:

Ingredient Quantity
White tofu (about 400 grams) 4 pieces, diced
All-purpose flour 6 tbsp
Tapioca flour 2 tbsp
Chicken broth powder 1 tsp
Ground black pepper 1/4 tsp
Salt To taste
Water 8 tbsp
Garlic cloves, minced 4 cloves
Bird’s eye chili, chopped 7 chilies
Cooking oil As needed

Instructions:

  1. Prepare the Dry Coating:
    In a large bowl, mix together the all-purpose flour, tapioca flour, chicken broth powder, ground black pepper, and a pinch of salt. Stir well to create a dry coating mixture.

  2. Make the Wet Batter:
    In a small separate bowl, take 2 tablespoons of the dry coating mixture and add 8 tablespoons of water. Stir until smooth to create the wet batter.

  3. Coat the Tofu:
    Gently dip the diced tofu pieces into the wet batter, ensuring they are evenly coated. Then, roll each tofu piece in the dry coating mixture until completely covered. This will give them a nice crispy texture when fried.

  4. Fry the Tofu:
    Heat enough cooking oil in a pan over medium heat. Once the oil is hot, fry the coated tofu pieces in batches. Fry until the tofu turns golden brown and crispy. Remove from the oil, drain on paper towels, and set aside.

  5. Sauté the Garlic and Chili:
    In a separate pan, heat a small amount of oil. Add the minced garlic and sauté until fragrant and lightly golden. Push the garlic to the side of the pan, then add the chopped bird’s eye chilies. Sauté the chilies until they are fully cooked and softened.

  6. Combine:
    Move the sautéed garlic back to the center of the pan and mix it with the chilies. Add a little extra salt if needed, stirring well.

  7. Final Touch:
    Toss the crispy tofu into the pan with the garlic and chili mixture, ensuring each piece is well coated in the flavorful mix.
