Tahu Gulung Telur Recipe
Ingredients:
For the Wrapper:
- 2 large eggs
- 1 tablespoon all-purpose flour
- A pinch of salt
- 1 tablespoon oil for frying
For the Filling:
- 4 blocks of tofu, finely mashed
- 1 large egg
- 1 stalk green onion, chopped
- Ground spices:
- 3 shallots
- 2 cloves garlic
- 1/2 teaspoon salt (adjust to taste)
For the Batter:
- 1 large egg
- Oil for frying

Prepare the Steamer:
- Begin by heating your steamer. Ensure the water is boiling before placing the rolls inside.

Make the Wrapper:
- In a bowl, combine the eggs, flour, and a pinch of salt. Mix well until smooth.
- Heat oil in a non-stick skillet over medium heat.
- Pour half of the batter into the skillet, spreading it evenly to cover the surface.
- Cook until the edges start to lift, then flip and cook the other side until golden brown. Remove and set aside.
- Repeat the process with the remaining batter. You should have two egg crepes.

Prepare the Filling:
- In a separate bowl, mix the mashed tofu with the egg, chopped green onion, and ground spices (shallots, garlic, and salt). Adjust seasoning to taste.
- Divide the tofu mixture into two equal portions.

Assemble the Rolls:
- Place one egg crepe on a piece of oiled aluminum foil.
- Spread half of the tofu mixture evenly over the crepe.
- Roll the crepe tightly, sealing the ends with the foil to keep the filling secure.
- Repeat with the second crepe and remaining tofu mixture.

Steam the Rolls:
- Place the wrapped rolls into the preheated steamer.
- Steam for 30 minutes. Once done, remove and let cool slightly.
- Unwrap the foil and slice the rolls diagonally.

Fry the Rolls:
- Heat oil in a pan over medium heat.
- Dip each slice of the roll into the batter made from one egg.
- Fry until golden brown and crispy, then drain on paper towels.
