Tahu Fantasi: A Delightful Bandung Snack

Ingredients

Small white tofu (tahu putih) 10 pieces, mashed with a fork
Carrot 1, shredded (or finely chopped)
Vermicelli noodles (bihun/soun) 2 pieces, soaked in hot water and cut into pieces
Eggs 2, beaten
Green onions (daun bawang) 1 stalk, finely sliced
Celery 1 stalk, finely sliced
Garlic 4 cloves, minced
Salt To taste
Black pepper To taste
Chicken stock powder To taste
Dipping batter ingredients
Eggs 2 (or 1 large one)
Tapioca flour 2 tablespoons, dissolved in 2 tablespoons of water
Salt To taste

Instructions

  1. Prepare the Mixture: In a large bowl, combine the mashed tofu, soaked vermicelli, shredded carrot, sliced green onions, sliced celery, minced garlic, salt, black pepper, and chicken stock powder. Mix well and taste; adjust seasoning, making it slightly saltier as the egg is yet to be added.

  2. Incorporate Eggs: Add the beaten eggs to the tofu mixture and stir until all ingredients are evenly blended.

  3. Prepare the Steaming Mold: Lightly grease a cake mold or steamer dish with oil. Fill it with the tofu mixture, pressing it down gently, leaving about ÂĽ space at the top.

  4. Steam: Place the mold in a preheated steamer and steam for approximately 15 minutes. Once done, remove it from the steamer and allow it to cool slightly before taking it out of the mold.

  5. Chill: Allow the tofu mixture to cool down and then refrigerate for at least 15 minutes to set (you can prepare it the night before for convenience).

  6. Make the Dipping Batter: In a separate bowl, mix the ingredients for the dipping batter until well combined.

  7. Fry the Tahu: Heat oil in a frying pan. Take each piece of the tofu mixture, dip it into the batter, and carefully place it into the hot oil. Fry until golden brown on all sides, then remove and drain excess oil on paper towels.

  8. Serve: Enjoy your Tahu Fantasi hot, optionally served with fresh chili for an added kick. These make a fantastic snack or appetizer, and you can prepare them in advance—just fry when ready to enjoy!
