Simple Tofu Fritters (Perkedel Tahu)
Ingredients:
- 10 pieces of firm tofu, mashed
- 1 stalk of green onion, thinly sliced
- 1 egg, beaten
- Salt to taste
- Granulated sugar to taste
For the spice paste:
- 4 shallots
- 3 cloves of garlic
- 1/2 teaspoon of white pepper
For frying:
- Cooking oil

Prepare the Tofu Mixture:
- In a mixing bowl, combine the mashed tofu with the beaten egg, sliced green onion, salt, and granulated sugar. Mix well until all ingredients are evenly distributed.

Make the Spice Paste:
- Blend the shallots, garlic, and white pepper into a fine paste. Add this spice paste to the tofu mixture and mix thoroughly.

Form the Fritters:
- Heat the cooking oil in a frying pan over medium heat.
- Take a handful of the tofu mixture and shape it into a ball or patty using your hands. Press firmly to make sure it holds together.

Fry the Fritters:
- Carefully place the tofu balls or patties into the hot oil. Fry until they are golden brown and crispy, turning occasionally to ensure even cooking. This should take about 3-5 minutes per side.

- Remove the fritters from the oil and drain on paper towels to remove excess oil.
