Bergedel Tahu (Perkedel Tahu) Recipe
Ingredients:
- 1 large block of firm tofu
- 1-2 stalks of fresh celery leaves, finely sliced
- 2 cloves of garlic
- 5 shallots
- 1/4 teaspoon ground black pepper
- 1/2 teaspoon salt (or to taste)
- 1 teaspoon bouillon powder (optional)
- 1-2 eggs

Prepare the Tofu: Begin by mashing the firm tofu until it reaches a smooth consistency. You can use a mortar and pestle or a fork for this step, depending on your preference.

Blend the Aromatics: Finely chop the garlic and shallots, or use a food processor to blend them into a paste.

Mix Ingredients: In a large bowl, combine the mashed tofu with the chopped celery leaves, garlic and shallot paste, ground black pepper, salt, and bouillon powder (if using). Mix well until all the ingredients are evenly distributed.

Incorporate the Eggs: Add 1-2 beaten eggs to the tofu mixture. Stir until the mixture is well combined and slightly sticky. The eggs will help bind the ingredients together.

Adjust Seasoning: Taste the mixture and adjust the seasoning if needed. You can add more salt or pepper according to your preference.

Shape and Fry: Heat oil in a frying pan over medium heat. Shape the tofu mixture into small patties or rounds. Fry them in the hot oil until they turn golden brown and crispy on the outside, about 3-4 minutes per side.

Drain and Serve: Once cooked, remove the patties from the oil and place them on a paper towel to drain excess oil. Serve warm with a dipping sauce of your choice, such as sambal kecap (a sweet soy sauce with chili).
