Crispy Tofu Sticks (Healthy Gorengan) with Simple Ingredients

Ingredients:

  • 2-3 blocks of tofu
  • 3 tablespoons all-purpose flour
  • 2 tablespoons yellow rice flour (or shrimp flour)
  • 5 tablespoons tapioca flour
  • 5 tablespoons Sajiku all-purpose seasoning flour
  • Salt or Masako seasoning, to taste (I use salt)
  • 1/4 teaspoon instant pepper (optional)
  • Chili sauce
  • Mayonnaise

Instructions:

  1. Prepare the Tofu:
    Begin by washing the tofu thoroughly. Once clean, cut it into long sticks, similar to how you would cut potatoes for fries. Exercise caution during this step to ensure the tofu sticks are uniform and intact.

  2. Set Up the Coating Stations:
    Prepare three separate bowls or plates. For best results, use medium-sized plastic dishes.

    • In the first bowl, combine the all-purpose flour, yellow rice flour, a pinch of salt (or Masako seasoning), and instant pepper if using. Mix well.
    • In the second bowl, place the tapioca flour.
    • In the third bowl, pour the Sajiku all-purpose seasoning flour.
  3. Coat the Tofu:
    Take each tofu stick and coat it in the first bowl with the flour mixture. Ensure the tofu is evenly covered. Next, transfer the coated tofu stick to the second bowl with tapioca flour, followed by the third bowl with Sajiku flour. Repeat this process until all tofu sticks are coated.

  4. Pre-Freeze the Tofu:
    Once all the tofu sticks are coated, place them on a plate. For the crispiest texture, freeze the coated tofu sticks for a few minutes.

  5. Fry the Tofu:
    Heat a generous amount of oil in a frying pan. The oil should be enough to submerge the tofu sticks, similar to the amount used for frying potatoes.

    • Once the oil is hot, carefully fry the tofu sticks until they are partially cooked. Remove and drain on paper towels.
  6. Double Fry for Extra Crispiness:
    To achieve an extra crispy texture, fry the tofu sticks twice. First, fry them until they are half-cooked. Drain and let them rest. Then, return them to the hot oil and fry again until they are golden brown and crispy. Be cautious not to burn them.

  7. Drain and Serve:
    After the second frying, drain the tofu sticks on a paper towel or cooling rack to remove excess oil. Allow them to cool slightly before serving.

  8. Serve with Dipping Sauces:
    Arrange the crispy tofu sticks on a plate. Serve with chili sauce and mayonnaise on the side for dipping.
