Tahu Telor with Peanut Sauce

Ingredients:

  • 1 block of firm tofu
  • 3 large eggs
  • Bean sprouts (as needed)
  • Celery leaves (as needed)
  • Fried shallots (as needed)
  • For the Peanut Sauce:
    • 5 small bird’s eye chilies
    • 1 handful of roasted peanuts
    • 4 cloves of fried garlic
    • 3 tablespoons sweet soy sauce
    • Sugar (to taste)
    • Salt (to taste)
    • Cooked water (as needed)
  • Cooking oil (for frying)

Steps:

  1. Prepare the Tofu: Start by washing and cutting the tofu into bite-sized cubes. Heat oil in a frying pan and fry the tofu pieces until golden brown and crispy. Remove and drain on paper towels to remove excess oil.

  2. Prepare the Bean Sprouts: In a separate pot, bring water to a boil and blanch the bean sprouts briefly. Drain and set aside.

  3. Prepare the Tofu and Egg Mixture: Cut the fried tofu into smaller pieces. In a bowl, whisk the eggs and season with a pinch of salt. Mix the tofu pieces into the beaten eggs. Heat oil in a pan and pour in the tofu-egg mixture. Fry until the eggs are set and golden brown, flipping carefully to cook evenly.

  4. Make the Peanut Sauce: In a mortar and pestle, or using a food processor, grind together the bird’s eye chilies, roasted peanuts, and fried garlic until smooth. Add the sweet soy sauce, a splash of water, sugar, and salt to taste. Mix well until you achieve a creamy, well-balanced sauce. Adjust seasoning as needed.

  5. Assemble the Dish: On a serving plate, arrange the tofu and egg mixture. Pour the peanut sauce generously over the top. Add a handful of bean sprouts for crunch. Garnish with sliced celery leaves and crispy fried shallots.

  6. Serve and Enjoy: Serve immediately for the best flavor and texture. Enjoy this savory and satisfying dish with a side of steamed rice or as a standalone treat.
