Tuna Samosas

Instructions:

Prepare the Potatoes: Start by washing the potatoes and placing them in a pot of cold water. Boil them for about 40 minutes, or until you can easily pierce them with a fork. Once cooked, drain and peel the potatoes, then cut them into small cubes.

Prepare the Aromatics: While the potatoes are cooking, peel and finely chop the shallot. Clean and chop the parsley. Mince the garlic as well.

Cook the Aromatics: In a frying pan, heat 1 tablespoon of extra virgin olive oil. Add the chopped garlic and shallot, then season with salt and pepper. Sauté for about 5 minutes, allowing the mixture to soften and the flavors to meld.

Mash the Potatoes: Once the potatoes are cooked and slightly cooled, mash them in a bowl. Add the sautéed shallot and garlic mixture, along with the chopped parsley. Mix everything together thoroughly.

Assemble the Samosas: Lay out the phyllo pastry sheets and carefully separate them. You will need 10 strips of phyllo for the samosas. Place a spoonful of the potato and tuna mixture at the bottom of each strip. Brush the edges of the phyllo with a little water to help seal the pastry. Fold the pastry over the filling, forming a triangle shape. Continue folding until you reach the end of the strip. Seal the edge with a bit of water to ensure it stays closed during frying.

Fry the Samosas: Heat vegetable oil in a deep pan or pot to 170°C (340°F). Carefully place one samosa at a time into the hot oil, frying for about 3 minutes per side, or until golden brown and crisp. Once fried, remove the samosas using a slotted spoon and drain on paper towels.
