Vegetable and Scamorza Panzerotti

Instructions:

Prepare the Vegetables:
Begin by washing the carrots, zucchini, and green beans thoroughly under cold running water.- Trim the ends of the zucchini and cut them into thin slices.
- Do the same with the carrots, slicing them into thin rounds.
- Finally, cut the scamorza cheese into small cubes.

Cook the Green Beans:
Trim the ends of the green beans and blanch them in a pot of salted boiling water for about 5 minutes. Once cooked, drain and chop them into small 4mm pieces. -
Sauté the Vegetables:
Heat a large non-stick pan over medium heat and add the vegetable oil.
Add the green beans and season them with salt and pepper to your taste.
Sauté the vegetables until they are tender and lightly golden. Once they are ready, transfer the mixture to a bowl and allow it to cool. -
Add the Cheese:
Once the vegetables have cooled, add the diced scamorza cheese to the bowl. Mix gently to combine. -
Fill the Dough:
Take each pizza dough disc and place a small amount of the vegetable and cheese mixture in the center.
Fold the dough over to form a half-moon shape, pressing the edges together to seal. Use a 10 cm diameter fluted pastry cutter to shape the panzerotti and ensure the edges are neatly crimped. -
Fry the Panzerotti:
In a large pan, heat the vegetable oil to 175°-180°C (use a kitchen thermometer to check the temperature).
Fry the panzerotti in batches of 2-3 at a time, making sure they are golden brown and crispy on both sides.
This should take about 3-4 minutes per batch. -
Serve:
Once the panzerotti are fried, remove them from the oil and drain on paper towels. Serve them hot and enjoy your delicious, crispy vegetable and scamorza panzerotti!
