Instructions

  1. Prepare the vegetables:

    • Begin by cleaning and prepping all the vegetables. Slice the carrot and red bell pepper into thin strips.
    • Finely chop the garlic and spring onion, and slice the chili pepper.
  2. Stir-fry the vegetables:

    • In a large pan or wok, heat 3 tablespoons of extra virgin olive oil over medium heat.
    • Add the garlic and spring onion slices to the pan and sauté for a few moments until fragrant.
    • Add the chili pepper and stir for another minute to infuse the oil with flavor.
    • Gradually add the green and red bell peppers, carrots, and soy sprouts to the pan. Allow each ingredient to cook for 1-2 minutes before adding the next, ensuring each vegetable is nicely sautéed.
    • Continue cooking all the vegetables together for about 10 minutes over low heat until they are tender but still crisp.
  3. Season the vegetables:

    • Pour the soy sauce and apple cider vinegar over the vegetables, stirring well to combine.
    • Taste and adjust the seasoning by adding salt as needed.
    • Let the vegetables simmer for another 2 minutes, allowing the flavors to meld together.
  4. Cook the noodles:

    • In a separate pot, bring salted water to a boil. Once boiling, add the noodles and cook them for no longer than 2 minutes.
    • After the noodles are done, drain them and rinse them under cold water to stop the cooking process.
    • Drain the noodles thoroughly and then divide them into four equal portions, shaping them into small nests.
  5. Fry the noodle nests:
