Instructions

  1. Cook the Quinoa
    Start by cooking the quinoa. In a saucepan, combine 1 cup of quinoa with 2 cups of water. Cook on a low flame with the lid on until the quinoa absorbs all the water. This will take about 10-12 minutes. Once done, drain any excess water and set the quinoa aside to cool.

  2. Prepare the Vegetables
    While the quinoa is cooking, heat some oil in a heavy-bottomed pan over medium heat. Add the chopped onion and sauté until it becomes soft and translucent, which should take about 3-4 minutes.

  3. Combine Ingredients
    In a large mixing bowl, combine the cooled quinoa and sautéed vegetables. Add the corn flour (or besan), black pepper powder, red chili flakes, and salt to taste. Drizzle in a teaspoon of cooking oil and mix everything thoroughly. Avoid adding water as the moisture from the vegetables and quinoa will be sufficient to bind the mixture.

  4. Form the Patties
    Once everything is well-mixed, take a portion of the mixture and shape it into small, round patties using your palms. Repeat until all the mixture is used up.

  5. Cook the Patties
    Heat a skillet or frying pan with a little sunflower oil. Once the oil is hot, add the prepared patties to the pan. Cook the patties for 3-4 minutes on each side, or until they are golden brown and crispy. Be sure to flip them carefully to avoid breaking.
