Cooking Time: 30 minutes

Total Time: 40 minutes

Servings: 4-6

Instructions

  1. Prepare the Spring Roll Filling
Begin by heating a tablespoon of oil in a wok or frying pan over high heat. Once hot, add the shredded cabbage, thinly sliced carrots, finely chopped green bell pepper, and onions. Stir-fry the vegetables for 2-3 minutes, until they soften slightly, but still retain some crunch. Add the grated ginger, salt, and pepper to taste, and stir well to combine. Transfer the mixture to a bowl and set it aside to cool completely.

  2. Prepare the Spring Roll Wrappers
If you’re using store-bought spring roll wrappers, lay them out on a flat surface. If you’re making homemade wrappers, click here for instructions on preparing them from scratch. Once the filling has cooled, it’s time to wrap the spring rolls.

  3. Fill and Roll the Spring Rolls
Place one spring roll wrapper on a clean, flat surface. Take a small amount (about 1 tablespoon) of the vegetable filling and place it near one corner of the wrapper. Use your fingers to fold the wrapper over the filling, rolling it gently but firmly towards the center. When you reach the center, fold in the sides of the wrapper to close it, then continue rolling to the opposite edge.

  4. Seal the Rolls
To seal the spring rolls, lightly brush the edges of the wrapper with the flour paste (made by dissolving all-purpose flour in a little water). This ensures the spring rolls stay tightly rolled during frying.

  5. Fry the Spring Rolls
Heat enough oil in a deep pan or wok to submerge the spring rolls. Once the oil is hot (about 350°F/175°C), carefully add a few spring rolls at a time. Fry them on medium heat, turning occasionally, until they turn golden brown and crisp on all sides. This should take about 5-7 minutes. Be sure not to overcrowd the pan to allow even frying.

  6. Drain and Serve
Remove the spring rolls from the oil and drain them on paper towels to remove excess oil. Serve hot, paired with your favorite dipping sauce—sweet and spicy chili sauce works wonderfully, but you can also try soy sauce or a tangy tamarind sauce.

Tips for Perfect Spring Rolls:

  • Filling Variations: Feel free to add other vegetables such as bean sprouts, mushrooms, or thin rice noodles for extra texture. You can also add tofu or tempeh for protein.
  • Dipping Sauce: Along with sweet and spicy chili sauce, you can also serve these spring rolls with soy sauce, garlic sauce, or a mixture of hoisin and sriracha for a flavorful dip.
  • Crispiness: If you like extra crispy spring rolls, try double frying them. Fry the spring rolls once, then allow them to rest for a few minutes before frying again for an extra crunchy exterior.
