Instructions

Step 1: Prepare the Vegetables

Start by washing and peeling all the vegetablesโ€”carrots, beetroot, potatoes, peas, and sweet corn. Chop the carrots, beetroot, and potatoes into small pieces. Place all the chopped vegetables into a pressure cooker. Add a pinch of salt and pour in about 1/4 cup of water. Pressure cook for 3 whistles, then turn off the heat. Let the pressure release naturally.

Once the vegetables are cooked, drain any excess water and mash them together. Set them aside to cool.

Step 2: Sautรฉ the Aromatics

Heat 1 teaspoon of oil in a pan over medium heat. Add the grated ginger, chopped onions, and green chilies to the pan and sautรฉ until the onions turn golden brown. This will release a delicious aroma, which is the base of the veggie patty flavor.
