Healthy Nuggets (Vegetable, Shrimp, Chicken)

Ingredients:

  • 250 grams shrimp, peeled, cleaned, and finely chopped
  • 250 grams chicken breast, finely chopped
  • 4 tablespoons all-purpose flour, heaping
  • 2 tablespoons cornstarch, heaping
  • 1 egg (if using a smaller egg, use 2 eggs)
  • 3 medium carrots, grated or finely chopped
  • 150 grams cauliflower, finely chopped (can be substituted with broccoli)
  • 1 small onion, finely chopped
  • 2 stalks green onions, finely sliced
  • 5 cloves garlic, minced
  • Salt, to taste
  • Pepper, to taste
  • Chicken bouillon powder, to taste (optional, non-MSG)

Coating:

  • Bread crumbs, as needed
  • Cornstarch, as needed
  • 2 eggs, beaten

Instructions:

  1. Prepare the Mixture:

    • In a large mixing bowl, combine the finely chopped shrimp and chicken.
    • Add the all-purpose flour, cornstarch, and the egg(s). Mix well to combine.
    • Stir in the grated carrots, chopped cauliflower (or broccoli), finely chopped onion, sliced green onions, and minced garlic.
    • Season with salt, pepper, and chicken bouillon powder to taste. Mix everything thoroughly until well incorporated.
  2. Steam the Mixture:

    • Grease a baking dish or steam tray with a little butter or oil.
    • Pour the mixture into the prepared dish, spreading it out evenly.
    • Steam the mixture for 20-30 minutes, or until fully cooked and set.
    • Once cooked, allow the mixture to cool completely. Once cool, cut into nugget-sized pieces.
  3. Coat the Nuggets:

    • Prepare three shallow dishes: one with cornstarch, one with beaten eggs, and one with bread crumbs.
    • Lightly coat each nugget with cornstarch, then dip in the beaten eggs, and finally coat with bread crumbs. Ensure each nugget is well-coated.
    • Place the coated nuggets on a tray or plate.
  4. Freeze and Fry:

    • To ensure the breading adheres well, freeze the coated nuggets for a short period.
    • Heat oil in a frying pan over medium heat.
    • Fry the nuggets in batches until they are golden brown and crispy on all sides.
  5. Serve:

    • Remove from the oil and drain on paper towels.
    • Serve the nuggets hot and enjoy!
