Instructions

  1. Prepare the Zucchini
Start by thoroughly washing the round zucchinis under cold running water. Remove the stems and slice each zucchini in half. Using a sharp knife or mandoline slicer, cut the zucchinis into ultra-thin slices, ensuring even thickness for optimal cooking.

  2. Prepare the Puff Pastry
Lay the rectangular sheet of puff pastry flat on a clean work surface. Using a smooth-edged pastry cutter, slice the sheet into long, even strips approximately 5 cm wide.

  3. Assemble the Roll-Ups
Place the thin zucchini slices along each strip of puff pastry, slightly overlapping them. Leave a small margin at the edges of the pastry for sealing. Next, layer the slices of scamorza cheese over the zucchini, keeping the cheese neatly within the pastry borders. Sprinkle a pinch of fine salt and a dash of black pepper over each strip to taste.

  4. Roll and Shape
Starting from one end, gently roll each pastry strip to form a swirl, ensuring the filling stays intact. Repeat this process for all strips, creating delicate zucchini and cheese “roses.”

  5. Brush and Bake
Preheat your oven to 200°C (390°F). Place the rolls onto a parchment-lined baking tray, spacing them evenly. Lightly beat the egg white and brush it over the tops of each swirl for a glossy, golden finish.

  6. Bake to Perfection
Bake the zucchini puff pastry rolls in the preheated oven for approximately 20-25 minutes or until the pastry is puffed and beautifully golden.

  7. Serve and Enjoy
Remove from the oven and allow the rolls to cool slightly before serving. These appetizers are best enjoyed warm but are equally delightful at room temperature.

This delightful recipe blends the mild sweetness of zucchini with the smoky richness of scamorza cheese, all encased in a buttery puff pastry swirl. Perfect for impressing guests or elevating a casual meal, these zucchini swirls are a must-try!
