Zucchini and Speck Croquettes

Instructions:
Step 1: Begin by washing and trimming the zucchini. Cut them into thick slices.
Step 2: Place the zucchini slices in a food processor or blender and pulse until finely chopped.
Step 3: Dice the speck into small cubes and set aside.
Step 4: Transfer the chopped zucchini into a mixing bowl and add the breadcrumbs, Parmigiano Reggiano, and finely chopped parsley.
Step 5: Add the fine salt and mix well to combine.
Step 6: Incorporate the diced speck into the mixture, stirring until evenly distributed.
Step 7: Using a spoon, gently mix everything together until you achieve a soft yet firm consistency.
Step 8: Rub a little extra virgin olive oil on the palms of your hands to prevent sticking, then shape the mixture into small, slightly flattened balls (croquettes).
Step 9: Roll each croquette in breadcrumbs to coat evenly.
Step 10: In a pan, heat a bit of olive oil and fry the croquettes in batches until they are golden brown and crispy on all sides.
Step 11: Transfer the croquettes onto a paper towel-lined plate to drain any excess oil.
