Instructions

  1. Prepare the Batter:
    In a large mixing bowl, combine the all-purpose flour and Grana Padano cheese. Stir together with a spatula to evenly distribute the cheese throughout the flour. Gradually add in the beer, followed by the water. Mix until you achieve a smooth, lump-free batter. Season with a pinch of salt and black pepper to taste. The batter should have a slightly thick consistency that can coat the zucchini.

  2. Prepare the Zucchini:
    Wash the zucchini thoroughly and trim the ends. Slice the zucchini into thin rounds, about 2mm thick. Add the zucchini slices to the batter and stir gently to coat them well.

  3. Heat the Oil:
    In a large frying pan or skillet, heat the peanut oil over medium heat until it reaches a temperature of about 170°C (340°F). Use a thermometer to ensure the oil is hot enough for frying.

  4. Fry the Fritters:
    Once the oil is heated, take two tablespoons and scoop a small portion of the batter with the zucchini slices. Drop the mixture gently into the hot oil, forming small fritters. Be careful not to overcrowd the pan; fry them in batches to keep the oil temperature stable. Fry for 2-3 minutes on one side, then flip the fritters to cook the other side for another 2-3 minutes, or until they are golden brown and crispy.

  5. Drain and Serve:
    Once the fritters are cooked, remove them from the oil with a slotted spoon and place them on a paper towel-lined plate to drain any excess oil. Continue frying the remaining fritters in batches.
