Instructions

To prepare the delicious zucchini fritters, start by washing and drying the zucchinis thoroughly. Once cleaned, trim the ends off and proceed to grate the zucchinis. Place the grated zucchini in a colander and let them drain for about 30 minutes to remove excess water from the vegetables. If needed, press them gently with a spoon or squeeze the zucchini in a clean kitchen towel to ensure all the moisture is removed.

While the zucchini is draining, prepare the batter. In a large mixing bowl, sift the all-purpose flour and combine it with the dry yeast. Add the finely grated Parmigiano Reggiano cheese to the flour mixture, stirring vigorously to ensure even distribution. The mixture should now have a thick consistency.

Once the zucchini has drained properly, add them to the flour and cheese mixture. Stir everything together until the batter is fully combined. At this point, cover the bowl with plastic wrap and allow the dough to rise for approximately 3 hours in a warm spot, ideally at a temperature of around 26-27°C. A great place for this is in the oven with just the light on. After 3 hours, the batter will have risen and should show visible bubbles, indicating it has fermented properly.

Next, heat the peanut oil in a small saucepan or deep fryer to a temperature of 170°C (you can check with a kitchen thermometer). Once the oil is hot, use a spoon to drop dollops of the batter into the hot oil. It’s best to fry a few fritters at a time to maintain the oil temperature. Fry them for about 3-4 minutes, turning them over with a slotted spoon to ensure even cooking on both sides. The fritters should be golden brown and crispy.

Once fried, use a paper towel to blot off any excess oil. Season the fritters with a pinch of fine salt while they are still hot.
