Instructions:

  1. Prepare the Zucchini:

    • Wash the zucchinis thoroughly and trim the ends.
    • Using a mandoline, slice the zucchinis lengthwise into thin strips, approximately 4-5 mm thick. You will need 36 slices for this recipe.
  2. Prepare the Cheese and Ham:

    • Cut the Edam cheese into thin slices, roughly the same width as the zucchini slices.
    • Slice the cooked ham into strips that will fit comfortably on the zucchini slices.
  3. Assemble the Pinwheels:

    • Take one slice of zucchini and place two slices of cheese on top, covering most of the zucchini slice.
    • Add one slice of ham on top of the cheese.
    • Carefully roll the zucchini slice into a tight pinwheel, securing the cheese and ham inside.
    • Repeat this process for all the zucchini slices, resulting in 18 pinwheels.
  4. Prepare for Frying:

    • Heat peanut oil in a frying pan to about 170°C (338°F), enough to submerge the pinwheels slightly.
    • In a shallow bowl, beat the eggs with a pinch of salt and black pepper.
  5. Coat and Fry the Pinwheels:

    • Dip each zucchini pinwheel into the beaten eggs, ensuring it is fully coated.
    • Fry the pinwheels in the hot oil, 2-3 at a time, for about 4-5 minutes, turning occasionally until they are golden brown and crispy.
  6. Drain and Serve:

    • Once fried, remove the pinwheels from the oil and drain them on paper towels to remove excess oil.
