Ingredients:

1 1/2 cups all-purpose flour 1/4 cup all-purpose flour
1 1/2 tsp baking powder 1/4 cup sugar
3/4 tsp baking soda 1/4 cup butter (cold)

1/4 tsp ground cinnamon
1 ripe banana, mashed
2 large eggs
1 cup sugar
1/3 cup butter, melted

Instructions:

  1. Preheat Oven: Heat your oven to 350°F (175°C). Grease three (3) 5 3/4 x 3 1/4 x 2-inch disposable mini-loaf pans (you can also use two 8 1/2 x 4 1/2-inch loaf pans).

  2. Prepare Dry Ingredients: In a bowl, mix together the all-purpose flour, baking powder, baking soda, salt, ground nutmeg, and ground cinnamon. Set aside.

  3. Prepare Wet Ingredients: In a large bowl, beat together the mashed banana, eggs, sugar, and melted butter until smooth and well combined.

  4. Combine Ingredients: Gradually beat the flour mixture into the wet ingredients on low speed until just combined. Be careful not to overmix.

  5. Fill Pans: Divide the batter evenly among the prepared loaf pans.

  6. Make Streusel Topping: In a separate bowl, use a fork to mix together the flour, sugar, cold butter, ground nutmeg, and ground cinnamon until crumbly.

  7. Top with Streusel: Sprinkle the streusel mixture evenly over the batter in the pans.
