Ingredients:

  • 6 tablespoons unsalted butter
  • 1 tablespoon margarine
  • 1 1/2 cups brown sugar
  • 1 1/4 cups chocolate chips
  • 1 teaspoon vanilla extract

Instructions:

Step Description
1. Preheat your oven to 375°F (190°C).
2. Line a large (or two smaller) cookie sheets completely with foil.
3. Cover the bottom of the sheet with baking parchment on top of the foil. This step is crucial to prevent sticking.
4. Evenly line the bottom of the cookie sheet with matzo, cutting extra pieces as needed to fit any spaces.
5. In a 3-quart, heavy-bottomed saucepan, combine the butter (or margarine) and brown sugar.
6. Cook over medium heat, stirring constantly, until the mixture comes to a boil (about 2 to 4 minutes).
7. Boil for 3 minutes, continuing to stir constantly.
8. Remove the saucepan from the heat and pour the caramel mixture over the matzo, ensuring it’s evenly covered.
9. Place the baking sheet in the oven and immediately reduce the heat to 350°F (175°C).
10. Bake for 15 minutes, checking every few minutes to avoid burning. If it browns too quickly, adjust the heat accordingly.
11. Once done, remove from the oven and immediately sprinkle with the chocolate chips.
12. Let it stand for 5 minutes, then spread the melted chocolate over the matzo.
13. While still warm, break the mixture into squares or irregular shapes.
14. Chill the pan in the freezer until the chocolate is set.
15. For a variation, you can use coarsely chopped white chocolate or a combination of white and dark chocolate, along with chopped or slivered toasted almonds, sprinkled on top as the chocolate sets.
16. You can also omit the chocolate for a caramel-alone butter crunch.
