  • 2 sprigs Spring Onion Greens, finely diced
  • 1 cup Coriander (Dhania) Leaves, loosely torn
  • 1 teaspoon Extra Virgin Olive Oil
  • 4 Hot Dog Buns

For the Orange-Lemon Dressing:

  • 2 teaspoons Lemon Juice
  • 2 teaspoons Fresh Orange Juice
  • 1/2 teaspoon Orange Zest (Rind)
  • 1/4 teaspoon Black Pepper Powder
  • 1 tablespoon Extra Virgin Olive Oil
  • Salt, to taste

For the Mint Yogurt Spread:

  • 4 tablespoons Hung Curd (Greek Yogurt)
  • 2 teaspoons Mint Leaves (Pudina), ground into a paste
  • 1 teaspoon Lemon Juice
  • Salt, to taste

Instructions:

  1. Make the Mint Yogurt Spread:
    In a small bowl, whisk together the hung curd (Greek yogurt), mint paste, lemon juice, and salt to taste. Set aside.

  2. Prepare the Orange-Lemon Dressing:
    In a large bowl, whisk together the lemon juice, fresh orange juice, orange zest, black pepper powder, olive oil, and salt to taste. Set aside.

  3. Prepare the Carrot Filling:
    Heat a small pan over low flame, add olive oil, and sauté the spring onions and grated carrots for about a minute on high heat, then switch off the flame. Add this carrot and spring onion mixture to the prepared orange-lemon dressing bowl and toss well.

  4. Toast the Buns:
    In the same pan, toast the split hot dog buns until golden brown, then set aside.

  5. Assemble the Snack:
    To assemble, take a toasted hot dog bun, spread a generous amount of the yogurt mint spread on the inside. Add a portion of the carrot and spring onion mix tossed in the orange-lemon dressing. Top with a few roughly torn coriander leaves and add more yogurt mint sauce if desired.
