Ingredients:

  • 1 onion
  • 1 lb hot sausage
  • 1 lb mild sausage
  • 2 cups cooked rice
  • 5 cups milk
  • 2 cups sharp cheddar cheese, shredded
  • 1/4 cup eggs (approximately 2 large eggs)

Instructions:

Step Description
1. Brown sausage and onion together; drain. In a skillet over medium heat, brown the hot sausage and onion until the meat is cooked through and the onion is translucent. Drain any excess fat and set aside.
2. Mix sausage mixture with rice. In a large mixing bowl, combine the cooked rice with the browned sausage and onion mixture. Stir well to evenly distribute the ingredients.
3. Layer with Rice Krispies and cheese, dividing between 2 (2 qt.) casserole dishes. Preheat your oven to 350Β°F (175Β°C). Grease two 2-quart casserole dishes. Begin layering the sausage and rice mixture evenly between the two dishes. Sprinkle a layer of Rice Krispies over the sausage and rice mixture in each dish, followed by a generous sprinkling of shredded sharp cheddar cheese. Repeat the layers until all ingredients are used, finishing with a layer of cheese on top.
4. Mix together eggs, milk, and soup and spoon over tops of casseroles. In a separate mixing bowl, whisk together the eggs, milk, and any soup or sauce of your choice until well combined. Pour this mixture evenly over the tops of the casseroles, ensuring that all ingredients are moistened.
5. Bake at 350Β°F for 40 minutes. Place the prepared casseroles in the preheated oven and bake for approximately 40 minutes, or until the cheese is melted and bubbly, and the casserole is heated through.
