Deliciously fresh and healthy, these Vietnamese shrimp rolls are served with a tangy cashew dipping sauce, or Hoisin sauce if preferred, making them a delightful appetizer or snack for any occasion.

Ingredients:

Sugar 1 1/2 tbsp
Green onion 1/2 cup
Salt 1 tsp
Pepper 1/4 tsp
Baby shrimp 1 cup
Carrot 1
Fresh cilantro leaves 1/4 cup
Fresh mint leaves 1/4 cup
Alfalfa sprouts 1/2 cup
Lettuce 1/2 head
Mayonnaise 1/4 cup
Thai red curry paste 1/2 tbsp
Lime juice 2 tbsp
Water 3/4 cup
Cashews 1 cup
Creamy peanut butter 2 tbsp
Fresh lime juice 1 tbsp
Ginger 1 tsp
Red pepper flakes 1 – 3 tsp

Instructions:

  1. Preparation:

    • Gather all the ingredients needed for the rolls and dipping sauce.
    • If using, combine mayonnaise, Thai red curry paste, lime juice, and water. Mix well and refrigerate.
  2. Prepare Ingredients:

    • Cook rice vermicelli according to package instructions, then rinse with cold water and chop into 2-3 inch lengths.
    • Soak dried shiitake mushrooms in warm water for 30 minutes. Drain and thinly slice.
    • Cook shiitake mushrooms in reserved liquid until tender. Season with soy sauce and sugar. Set aside to cool.
    • Mix rice wine vinegar, salt, and pepper with green onions. Set aside.
  3. Assemble Rolls:

    • Lay out all ingredients including shrimp, shredded carrot, cilantro, mint, alfalfa sprouts, and lettuce.
    • Fill a shallow casserole dish with warm water. Dip rice wrappers one at a time until pliable, then drain on paper towels.
    • Spread mayonnaise mixture (if using) on the lower third of each rice wrapper.
    • Layer noodles, shrimp, mushrooms, green onions, carrot, cilantro, mint, alfalfa, and lettuce on top.
    • Roll the wrapper tightly from the bottom, folding in the sides as you go.
    • Place finished rolls seam-side down on a serving plate and cover with a damp paper towel to keep moist.
  4. Slice and Serve:

    • Diagonally slice each roll in half before serving.
  5. Prepare Cashew Dipping Sauce:

    • Toast cashews in a preheated 400°F oven until golden, then finely chop.
    • In a small saucepan, combine sugar and water. Bring to a boil, stirring constantly.
    • Remove from heat and add remaining ingredients. Mix well and adjust consistency with water if needed.
    • Add red pepper flakes according to preference.
  6. Enjoy:

    • Serve the rolls with the homemade cashew dipping sauce or a diluted mixture of hoisin sauce and water.
