- Gather all the ingredients needed for the rolls and dipping sauce.
- If using, combine mayonnaise, Thai red curry paste, lime juice, and water. Mix well and refrigerate.

- Cook rice vermicelli according to package instructions, then rinse with cold water and chop into 2-3 inch lengths.
- Soak dried shiitake mushrooms in warm water for 30 minutes. Drain and thinly slice.
- Cook shiitake mushrooms in reserved liquid until tender. Season with soy sauce and sugar. Set aside to cool.
- Mix rice wine vinegar, salt, and pepper with green onions. Set aside.

- Lay out all ingredients including shrimp, shredded carrot, cilantro, mint, alfalfa sprouts, and lettuce.
- Fill a shallow casserole dish with warm water. Dip rice wrappers one at a time until pliable, then drain on paper towels.

- Layer noodles, shrimp, mushrooms, green onions, carrot, cilantro, mint, alfalfa, and lettuce on top.
