  • 1 cucumber
  • 1 pineapple
  • 2 onions
  • 3/4 cup sugar
  • 1 cup wine vinegar
  • 2 cups white vinegar
  • 1 teaspoon salt
  • 1 tablespoon curry powder
  • 1/2 teaspoon turmeric

  • 1 tablespoon cornflour

1 Halve, seed, and cut up the cucumber into small pieces.
2 Cut the onions to about the same size as the cucumber.
3 In a large saucepan, combine cucumber, pineapple, onions, sugar, wine vinegar, white vinegar, salt, curry powder, turmeric, and celery seed. Stir well.
4 Bring the mixture to a boil over medium heat, stirring frequently. Once boiling, reduce the heat to low and let it simmer uncovered for 15 minutes.
5 In a small bowl, mix the cornflour with a little extra vinegar to form a paste.
6 Stir the cornflour paste into the pickle mixture and simmer for an additional 2-3 minutes, stirring continuously, until slightly thickened.
