Instructions

Step 1: Preparing the Date Filling

  1. Soak the Dates
    Begin by soaking the seedless dates in ½ cup of hot water. Let them soften for 1 to 2 hours.

  2. Grind Almonds and Coconut
    Separately, grind the almonds into a fine powder and set aside.
    Grind the dry grated coconut into a thick paste by adding very little water.

  3. Make the Date Paste
    After the dates have softened, grind them (without additional water) into a smooth paste.

  4. Combine the Filling Ingredients
    In a pan, combine the date paste, almond powder, coconut paste, and jaggery if using.
    Stir the mixture over low heat for about 2-3 minutes, allowing the ingredients to combine well.

  5. Shape the Date Filling Balls
    Allow the mixture to cool slightly, then divide it into 4 equal portions. Roll each portion into a small ball and set aside.

Step 2: Preparing the Dough

  1. Mix the Dough Ingredients
    In a large mixing bowl, add the semolina, all-purpose flour, and a pinch of salt.
    Gradually add water and knead to form a soft dough.

  2. Rest the Dough
    Knead the dough thoroughly for 6 to 8 minutes, ensuring it is smooth and elastic.
    Cover the dough with a moist cloth and allow it to rest for 1 to 1½ hours.

  3. Oil the Dough
    After resting, knead the dough briefly once more and then pour enough oil over it to cover it fully.
    The dough should be pliable enough to spread thinly when pulled.

Step 3: Shaping and Cooking the Date Obattu

  1. Flatten the Dough
    Place a small piece of the dough, about the size of a gooseberry, onto a greased sheet of parchment paper.
    Flatten it slightly with your fingers to make a small disk.

  2. Add the Filling
    Place one of the prepared date filling balls in the center of the dough disk.
    Stretch the dough over the filling, covering it completely and sealing the edges well.

  3. Flatten the Obattu
    Using your fingers, gently pat and stretch the dough-covered filling ball into a flat, thin disk on the parchment paper.

  4. Cook the Obattu
    Heat a tava or flat skillet over medium heat. Carefully transfer the flattened obattu onto the hot tava and cook for about 30 seconds.
    Remove the parchment paper carefully, then drizzle a small amount of oil or ghee around the edges.

  5. Flip and Finish Cooking
    Cook the obattu on both sides until it turns golden brown and slightly crisp. Add a little more oil or ghee as needed.

Serve the Date Obattu warm with a refreshing Kosambari salad made from raw mango, cucumber, carrot, and beetroot, or enjoy it alongside Paruppu Rasam for a balanced, delicious meal.
