Drunken Beans Recipe

🕒 Total Time: 58 minutes
🥄 Servings: 4

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion
  • 1/2 teaspoon fresh ground pepper
  • 1 teaspoon salt
  • 3/4 cup vodka
  • 1 tablespoon white vinegar
  • 1 pound green beans

Instructions:

  1. Prepare Ingredients: Start by gathering your ingredients: olive oil, onion, fresh ground pepper, salt, vodka, white vinegar, and green beans. Rinse the green beans under cold water and trim the ends.

  2. Saute Onions: Heat the olive oil in a large saucepan over medium-high heat. Add the chopped onion, 1/2 teaspoon of fresh ground pepper, and a pinch of salt. Saute the onions for about 3 minutes until they become translucent and fragrant.

  3. Deglaze Pan: Turn the heat to high and add 1/4 cup of vodka and the white vinegar to the pan. Stir to combine and deglaze the pan, scraping up any browned bits from the bottom. Let the mixture reduce until it forms a glaze.

  4. Add More Vodka: Once the first addition of vodka has reduced, add another 1/4 cup along with a pinch of salt and pepper. Stir and allow it to reduce to a glaze again.

  5. Repeat: Repeat the process with the final 1/4 cup of vodka, salt, and pepper. Stir and let it reduce until it forms a thick glaze.

  6. Cook Green Beans: Once the liquid has evaporated and the mixture is glossy, add the green beans to the pan. Pour enough water to cover the beans. Season with additional salt and pepper to taste.

  7. Boil: Increase the heat to high and bring the mixture to a boil. Allow the green beans to boil uncovered until all the cooking liquid has evaporated and the vegetables are glazed, stirring occasionally. This should take about 35 to 40 minutes.

  8. Serve: Once the green beans are tender and coated in the flavorful glaze, remove them from the heat. Serve hot as a delicious side dish or enjoy them as a standalone meal.
