Instructions

  1. Preparation: Begin by sieving the gram flour (besan) into a bowl and set it aside. Grease a plate with ghee to prepare for pouring the burfi later.

  2. Roasting the Besan: Place a pan on low heat and add the sieved besan. Roast it gently for a few minutes until it releases a nutty aroma. Once roasted, transfer it to a plate and set aside.

  3. Melting Sugar: In the same pan, combine the sugar with 1/4 cup of water. Stir continuously over low heat until the sugar completely melts and forms a syrup.

  4. Combining Ingredients: Add the roasted besan back to the pan along with the milk, grated coconut, and melted ghee. Mix thoroughly using a whisk to eliminate any lumps.

  5. Cooking the Mixture: Continue stirring the mixture as it heats up. As it thickens, incorporate the cardamom powder. The mixture will begin to froth and become dense, eventually pulling away from the sides of the pan.

  6. Setting the Burfi: Once the mixture has thickened sufficiently, turn off the heat. Pour it into the greased plate and spread it evenly. Gently tap the plate to level the burfi and use the back of a ladle to smooth the surface.

  7. Cooling and Serving: Allow the burfi to cool for a few minutes, then cut it into desired shapes. Let it cool completely before transferring the pieces to an airtight container for storage.
